2017q2spiritmw_400Mike Whitcanak has been working hard in Davenport location since 2006.  Despite over 10 years of service to Biaggi’s, he is somewhat of a short timer in that kitchen with Dustin and Pat predating the majority of those working in the field.  As a sous chef he has worked hard to teach and maintain our standards for quite some time.  In Quarter 2, Mike lent his knowledge and support to both West Des Moines and Omaha.  He has made extended stays to both locations to help support a Sous chef maternity leave in West Des Moines and to help Omaha as they were rebuilding their BOH staffing.  Both of these stores sent back rave reviews of Mike and his efforts. In fact John Leiendecker even mentioned how, “Mike often thought like he did!”.  Strong praise from an MP who was also one of our most respected Chef Partners.  As we finished out the Quarter, Mike volunteered to return to Omaha for another extended support stint, as Minh moves to our Rochester location.  Mike’s willingness to travel and his positive attitude has been much appreciated, and we have enjoyed watching him grow as he supports Biaggi’s!

Tom Carroll

 

 

2017q1sptom_400Tom Carroll began his Biaggi’s career in July 2001 as a grill cook in our Bloomington flagship restaurant. As a graduate of Illinois Wesleyan University, his passion was always centered on teaching, writing and business.

In March of 2005 Tom was promoted to Executive Chef, moved west to Colorado Springs and has resided here ever since. In the years following, his undeniable passion for organization, leadership, high morale, service and plate execution has allowed the restaurant to become one of most respected restaurants in town. In addition, Tom has become the bench mark for BOH performance. This I see reflected in his labor, costs, and five straight years of SSS growth with a sixth year well on its way.

Always willing and available to take time to talk to staff and guests, be it personal or professional, Tom strives to make an impact on a daily basis. His assistance and commitment in mentoring and guiding his peers throughout the chain only enhances this style of support while making us a stronger company.
Outside of work, you can find Tom with family or on the beautiful hiking trails of Colorado.

spiritlorelei_400Lorelei has had a very busy and well-traveled 4th Quarter. She began Period 10 serving as the lead manager in Davenport. When asked she quickly volunteered to travel to Omaha to serve as manager support for 3 weeks during Period 11 as they transitioned to a new General Manager. Two thirds of the way through that commitment I called her and let her know I had an opportunity to move across the country to become the new General Manager at our Rochester location. Without hesitation, she put her name in the hat and began the process which led to her promotion. At the beginning of Period 12 she hopped in her car with her dog Charlotte and drove 750 miles to Rochester.

She walked into a store that had just gone through a rough patch with manager turnover and was close to losing its mojo. In a little over a Period, she was able to get the attitudes and accountability back to where it had been, win over the local guests who have high expectations of us, and was able to get all of the staff who had moved on during the turnover to return to Biaggi’s.

 

Her spirit and belief in Biaggi’s went a long way to winning over a tenured staff and leading them back on track to representing us all to the highest degree. She has had a great impact in her short time in Rochester and I look forward to seeing big strides as she moves forward with her team.

Tim Moran

 

 

timm_400_02On September 3, 2014, knowing that we were in an extreme need for strong leadership in Ridgeland, Tim Moran asked to be transfered to the Ridgeland Biaggis. This was a high-volume unit in the midst of a lot of transition.

He uprooted his pregnant wife and two daughters to move 800 miles away to oversee a kitchen in which he saw great potential. Because of his dedication, he voluntarily left family support in Fort Wayne, a dialed-in kitchen and a solid quality of life to bravely take on this new challenge in Ridgeland.

Year-to-date, his kitchen is .3% under budget in FCOS, .3% under budget in BOH labor and has run less than $600 in YTD overtime in the back of the house. His team is so stable that Tim has begun learning the systems in the front of the house, where he is frequently running shifts. Additionally, Tim has been assisting with leadership in the kitchen in Evansville.

As if this weren’t enough for a full life, Tim and his wife Alyssa are in the process of adopting a beautiful 14-month-old girl from Kyrgyzstan. Born with a cleft lip and palate, this little girl was abandoned by her mother after the birth. She was sent to a special needs orphanage, where she awaits the finalization of the adoption. Tim and Alyssa have made three trips for this process: one for 10-day bonding, one for a court hearing and they are headed back overseas for their final trip to pick her up on September 30th.

 

This man exemplifies spirit and determination for the cause of good!

Chelsea Powell continues to impress us with her dedication to Biaggi’s.  With the time drawing near for the move to the Middleton location, we knew it was going to get very challenging.  We knew that we needed additional support as this team would have some new challenges when it opened.  In addition, we were going to open on Mother’s Day weekend.  When the question was asked, “Who can come up here for a week or two and provide support and coverage?”, it was quiet (crickets).  In fact, only one person said “I would like to help out”.  

Chelsea came up and worked 13 straight days to help ensure a successful opening.  I realize that no one wants to give up their talent on Mother’s Day, so I have to thank Jeremy as well, as I left the decision to him.  To his credit, he did not hesitate.  He said, “They need the help and we will make it happen.” The last point I will add is that Chelsea has a toddler son, and she took her second Mother’s Day away from him to make sure we had the support that we needed.  

Like many others, she could easily have said “no” as the timing was less than ideal.  But to her credit, she wanted the opportunity to help and be involved in a new restaurant opening.  Middleton has been a huge success and that management team deserves a lot of credit.  Chelsea played a huge role in this opening and we salute her with the Spirit Award.

Gary Chanen

Gary has done an incredible job being the MP in 2 units, Despite the fact that the landlord let the word leak out that our space in the EP Mall was available to lease, he retained almost his entire team right up until we closed – this is no easy feat! He then ran point on the closing of our EP unit and all of our deadlines were met. I was overwhelmed at the loyalty that he and Fernando had developed with their team in EP. So many people volunteered to assist with the closing and clean out of our unit. When Gary told the team that he would be transferring to MG, many of our staff transferred and took the much longer commute to stay with Biaggi’s. Gary left EP on Feb 3rd and reported in MG the next morning on Feb 4th. He has worked tirelessly to really get the financial momentum moving in MG. His net sales were up almost $51K to budget, his PBA is a full point over and his operating profit is a hair shy of being $19K over budget for Q1. Needless to say, there were many 6 day work weeks in his calendar. I am excited to see what he accomplishes in MG this year!

Charlene Long

So a young child was spotted pulling Angels off our Angel Tree, Charlene approached him, as she guards that tree with her life, she introduced herself and explained that the angels were for children who were sick. The boy pointed to his brother and said, “he is in remission with blood cancer”, and that we were the only reason they had a Christmas 2 years ago.  His family took 3.

Charlene’s efforts led to gifting 125 children/ families last year. Has to be over 500 running since its inception 4 years ago. 

We have guests come in – regularly, not to eat, but rather to join the cause and gift an angel. 

A professional Santa helped hand out the gifts last Christmas while a professional cartoonist drew their pictures – also for free.  The boy who got a bike was so happy it would bring tears to your eyes! The wine room was filled (literally) with gifts – SF financial (regular banquet group) brought a pick up truck FULL OF GIFTS!!  All supplied by their company and many of their clients. People came by to just to drop off money or gift cards – crazy community support!!  It was amazing how many regular guests, current employees and even termed employees showed up for the wrapping day. Very heart warming.

Charlene is truly commitment to this community. Her efforts is rapidly becoming a Colorado Springs legacy. Seriously unbelievable guest support!!  The goodwill that she has generated is immeasurable.

Andrew Nicholson

Andrew Nicholson – In the need to help support Perrysburg during the management exodus, Andrew has been invaluable in his selfless support of the unit and remaining team and staff.  In total, Andrew spent over 50 days, in Perrysburg, away from his family and his own unit.  In that time, Andrew was able to provide support, coaching and development to both the FOH and BOH equally; a unique skill set which his experience as a Chef prepared him for.  To say that Andrew helped get and keep Perrysburg pointed in the right direction is doing a disservice to this gargantuan effort.  Additionally, with as many visiting partners and managers as Perrysburg’s had in the past 5 months, Andrew was the “go to” central and cohesive resource providing clarity where there was confusion.  He has truly been a rock for Perrysburg.

Shawn Snow

Our Chef Partner Shawn Snow is originally from Colorado and was introduced to cooking and restaurants early in his life.  His father owned and operated a restaurant. As Shawn grew up, he could see first-hand the hard work and dedication it took to run a successful operation.  This work ethic and dedication continues to be a strong part of Shawn’s makeup and has propelled his culinary career.

Shawn took an opportunity early in his career to work as a Sous Chef in Eaton Colorado’s Country club for six years.  During this time, the opportunity and environment allowed Shawn to get a taste of working in a kitchen where the menu was chef driven and where there is an emphasis on quality with each and every dish.

After his experience working at the Eaton Country Club, Shawn started his career with Biaggi’s in 2006 as Sous Chef in Loveland Colorado.  Even back then, Shawn was always willing to help out, and he moved to West Des Moines from 2007 to 2008 where he worked directly with Chef John Leiendecker.

Shawn loves Colorado where he grew up.  If you asked him, he would say that the Denver Broncos are the best team in the NFL and the scenery and backdrop of the state compete with no other.  He will also say that the leadership skills and dedication he learned from his time working with the different Biaggi’s culinary teams has proven to be invaluable.  He returned to Eaton Country Club as Executive Chef for several years before coming back to Biaggi’s in the Spring of 2011.  Once again, he worked directly with Chef Scott Kunz and the team of which he had begun his Biaggi’s career.

It was when Cedar Rapids was in need of a Chef Partner in the Fall of 2013 that Shawn once again was happy to step up and use everything he has learned to help make our Cedar Rapids location drive to be it’s very best.  Shawn is always willing to help and has continued to make an impact with Biaggi’s by doing just that. 

 

When not at work, Shawn is all about spending time with his pets.  He loves animals and has two cats named Mr. Kitty and Polly.  He also has a wonderful dog named Samson whom he adores.  He enjoys sports and is incredibly knowledgeable about any and all current events in sports.  He  will gladly offer his unbiased opinions as well!  He likes cars and drives an awesome white Dodge Challenger.  Above all, he is a great partner, and I really appreciate his hard work and dedication to this team.

Pat Trainor

Chef Pat Trainor, originally from Davenport, began cooking at a young age.  He had his first paying cooking job at 12.  After graduating from high school here in Davenport, Pat spent time in the Marine Corps.  The Marines gave Chef Pat a chance to travel much of eastern Asia, including Okinawa, Japan, and the Philippines.  The Marines took Pat away from Iowa, and landed him in California.

After the Marine Corps, and a brief time at a recording engineering school in Florida, Pat returned to California. Pat worked in several different restaurants, becoming the manager at PIZZA MY HEART in Santa Cruz, CA.  Pat also played guitar in the band Quasi Stellar Object (QSO), but decided he was a better chef than guitarist, and focused his pursuits in the culinary field.

Pat was introduced to a more “chef driven” kitchen at Papa’s Church, in Santa Cruz.  It was during his time in California that Pat had the opportunity to work with several different chefs, until getting his first executive chef position, at the Santa Cruz Sports Bar and Grill.  Pat also spent time cooking at New Leaf Community Markets, a group of gluten free, dairy free, health food centric grocery stores.

With his new daughter, Kaitlin, Pat moved back to Iowa in 2001 and took a line cook position at Biaggi’s.  He was promoted to sous chef, and eventually to chef partner in 2004.  Pat has been very active in, and around Davenport, including helping teach culinary arts at Scott Community College for nearly six years.

When not at work, Pat enjoys working in his yard and gardening.  He and his wife, Rhonda, enjoy cooking and dining on great food together.  Though Pat has a strong desire to get out on the golf course, he seldom does.  He is extremely dedicated to his family and our continued success here in Davenport.

Tim Moran began his career with us on October 2010 as a sous chef in Fort Wayne. From the very beginning Tim exuded integrity and his work ethic was second to none. It didn’t take Tim long to advance and on August 2012 he was promoted to Chef Partner of the Fort Wayne Biaggi’s. The real commitment came on September of last year when he asked to transfer to the Ridgeland Biaggis, a high volume unit but a unit in the midst of a lot of transition.

He uprooted his pregnant wife and 2 daughters to move 800 miles and oversee a kitchen that had great potential in but was a ways off. He had family support in Fort Wayne, a dialed in kitchen and a solid quality of life. He had no reason to leave! But Tim approached me about wanting to make a name for himself, which he did with this move.

He has had an immediate impact on Ridgeland’s quality of food, staff and financial statement with food cost and now labor.

Chelsea is ALWAYS looking to help out the team.  In this past quarter, she volunteered to take over all of the EC duties, knowing that Juanita would be out 6-8 weeks on maternity leave.  Chelsea is in charge of the service staff in Omaha, and we all know that is a huge responsibility in and of itself.  For someone, who has a baby of their own at home, to step up and insist on carrying someone else’s workload, truly amazes me.  

 

It is so rare to have a new manager have such a great sense of ownership.  It wasn’t that long ago that Chelsea was acting and operating as the MP in Omaha. She was asked to help out while we were down an MP and she jumped right in.  

 

She and I talked almost every day, and I was so impressed with her ability to quickly learn, adapt and overcome.  She never complained about the huge responsibility, and in fact, two other MP’s commented on how instrumental she was in keeping team Omaha on course.  We are so fortunate to have her as a member of our team.  Her spirit for Biaggi’s culture and commitment is unquestionable.  

 

It is her sense of TEAM, and her unselfish acts, that really define her as an extraordinary young leader.

Sonya Gray

Anyone can look at Evansville and immediately begin to count the successes that they have notched under Sonya’s leadership however, there is something that goes unnoticed by most outside of Evansville. They are a Mecca when it comes to training!

Sonya and her team have been a tremendous resource when it comes to training and have trained people not only for the Baxter region but for others as well. The commitment and countless additional hours that Sonya puts in are invaluable to our organization. As trainees get acclimated in their units they sing the praises of her and her team.

The spirit of Biaggi’s is something we all try to show every day in our buildings across the country.  We break rules to get guests what they want.  We find a way to work around conflicts so our staff can attend special events outside of work. We donate our time to help groups of all kinds. We go out of our way to help others in any small way we can.

There have been many of these situations over John Leiendecker’s eleven plus year career representing Biaggi’s in West Des Moines that would make him worthy of this award.  Most recently one thing truly stands out, he and his family made an incredibly unselfish decision that speaks to the spirit we would like to be able to see in ourselves and those we work with.   A couple of years ago the Leiendeckers became foster parents with the hope of giving some children in difficult situations a little bit of love, attention and a safe place to land for at least a little while.  They have taken some of these kids to camp, on vacations and treated them as part of their family.  About a year ago, a big eyed little girl named Jasmine showed up at their door and immediately made a huge impression on the family. 

A couple of weeks ago, to the excitement of everyone who has met Jasmine, she officially became a Leiendecker and was formally adopted by John, Lindsey and their two boys.  More than a random act of kindness, this act will give this sweet little girl an opportunity for a life she may never have had a chance to see.

We are all very excited to celebrate Jasmine’s adoption and very proud to have a family with so much character in the Biaggi’s family!

Scott Kunz

It is with great pride that I introduce Scott Kunz as our “SPIRIT AWARD WINNER” for the 1st quarter 2013. As most of you already know, Scott has been with Biaggi’s for a long time (since October 1999).

I have had the pleasure of watching Scott grow from a sous chef to one of our most tenured chef partners. Scott has given a lot back to the company, and he really thrives when given the chance to help others develop.

Just recently Scott has helped out in Algonquin and Perrysburg. This is a pretty generous gesture to go to other units, and be out of your own unit for weeks at a time. Scott has done this repeatedly without hesitation.

Scott has built and surrounded himself with a solid team in LL and that enables him to help out in other units. Scott was also awarded the chef partner of the year in 2010.

He just recently had 2 chefs training with him in Loveland for the last 2 weeks. Scott was nominated for this award because of the generous contribution of his time to help other chefs grow and prosper. He clearly has gone above and beyond to make us a better company!
