I am so very proud of both the Biaggi’s and the Ancho & Agave brands. 2019 Q4 Partner Team – Deer Park

 

Congratulations to our Q4 Partner Team: Ashley Bennett and Craig C. Gareiss! 

Ashley Bennett has been with Biaggi’s for over 11 years and moved to our Deer Park location in January of 2017. Craig C. Gareiss has been with Biaggi’s for 4.5 years and ALSO moved to our Deer Park location in January of 2017! This is Ashley’s second time winning Partner Team of the quarter, but the first time winning since transferring to Deer Park. Though Ashley and Craig had not worked together before, they have grown to be a great example of partnership in our company. They work hard every day to grow and maintain their professional relationship together, to break down barriers between BOH and FOH and to manage their restaurant as one.

Ashley and Craig’s ripple effect extends far beyond Deer Park as they are a training powerhouse in our region (and beyond), Craig does a fantastic job helping rollout our KDS systems, and these two can always be counted on for coverage and tutelage throughout the company. In addition to their extra-curricular activities and running a great operation, Deer Park’s team puts out some of the most extraordinary wine dinners I’ve ever had the pleasure of attending; Craig’s amazing culinary skills combined with Ashley’s superb management are molding their entire team to a new level of food and service.

Please join me in celebrating as these two certainly have created a great team in Deer Park and are great partners to one another. I look forward to watching Ashley and Craig’s continued success with Biaggi’s!

2019 Q4 Spirit Award – Eric Loest

During the 4th quarter, we moved on from our MP in Davenport and Eric agreed to take on the challenge of getting what was once one of our busiest and most profitable locations back on track while at the same time, keeping an eye on things and supporting the team in CR.

In Cedar Rapids, Eric had spent extended time with a full team and while showing steady sales growth and financial success. It would have been simple to just stay the course and let the results continue without a big shakeup or extra responsibility. In Davenport, not only did he have struggling sales and financial results to overcome with no event coordinator during the busiest of seasons, but he also had to reinvent the culture and attitude that had deteriorated over recent months in the front of house.

Periods 12 and 13 saw a great improvement with Eric on board, something you can all see in recent statements and in the social media comments that have been coming in. Even more impressive to me was the lack of falloff seen in sales growth and financial results in Cedar Rapids, despite his attention being mostly directed to the East. Playing the role of MP in 2 stores as well as leading the event charge during the craziest time of the year was a challenge, but Eric was able to stay ahead of it all with a great attitude and in a manner that showed respectful accountability to the staff in both locations.

2019 Q3 MP – Jeff Jenkins – Colorado Springs

 

Jeff joined the Biaggi’s team over 14 years ago.  He has been the MP of the Colorado Springs unit for the last nine years.  I think this year has been the most challenging year for Jeff, as he has not had the stability of having a Chef Partner in place.  However, as the great leaders do, Jeff has persevered by taking a much more active role in his kitchen.  He also made the commitment to develop his long-term sous, Brian Ulatowski, who is very deserving of the opportunity to run this kitchen.  Jeff has done a tremendous job in the third quarter.  Under his leadership, Colorado Springs has made their sales and PBA.  Currently, Jeff and his team are working on making this the seventh straight year of SSS.  Jeff is a very humble person who gives respect to everyone he works with.  He does hold people accountable, but he makes his expectations very clear, and his staff knows he is fair, even-keeled and most importantly, that he will support them.  Jeff is a pleasure to work with and a very highly valued partner!

2019 Q3 Spirit Award – Sean Swank

In Quarter 3, Sean Swank found that the lead responsibilities in Evansville had fallen directly on his shoulders as we looked to find and train our new Managing Partner. While there was a ton of things he had not been directly involved with in the past, he did not hesitate to step up and figure out how to work through them. On top of having to deal with BOTH Kevin and I, taking on a bunch of new responsibilities and fronting the communication with the corporate office, he had the difficult task of having to support staff and guests alike as they navigated through a ton of emotions in the building. Despite all the extra hours and more stress than he would have ever expected, he pushed through multiple periods without allowing the little things to fall through the cracks.

I have to add, on my first visit to Evansville after they joined my area, I was a bit overwhelmed by the outreach of support for Sean that I received from the guests and staff. I had more people pull me aside to give him praise and support for how he was handling himself and the restaurant than any manager that I can recall over my tenure with Biaggi’s. It was great to see and hear what Sean was able to accomplish when put into such a difficult position. I left that week feeling really good about his leadership in Evansville and what our new MP would be walking into.

As you can see from the pictures of the Spirit Award Celebration in Evansville, Sean has made a real impact on Biaggi’s!

2019 Q2 Partner Team – Omaha

Congratulations to Zach Link, Adam Copley, and Kevin Schlotfeld in Omaha!

 

Zach Link

Like most of you, I’ve been working restaurants longer than I’d like to admit and I can’t see myself doing anything else. Sometimes it seems like we’re crazy for loving it, but love it just the same. My last role was with Olive Garden and it brought me to Sioux Falls, SD. I spent 5 years with them as the General Manager but with 2 young boys and a stay at home wife we needed to be closer to family. I came to Biaggi’s at the beginning of 2018 because I wanted to relocate back home to Omaha, NE. When I saw that Biaggi’s was looking for a Chef Partner I immediately knew this is where I wanted to be. I have many fond memories of coming here as a guest and I was thrilled at the opportunity to provide that to others. After talking with Jim and doing my working interview with Matt Mickle it solidified in my mind this was the place to be and I have only come to love the people of this company even more. When the opportunity to take over the Managing Partner role came up in March I was incredibly honored to accept the position. Thank you to all those at the home office and restaurant-level that have helped us in Omaha to have the success we had in Q2 and I am looking forward to continued success here in Omaha.

Adam Copley

Born in Denver Colorado and have lived here in Omaha for the last five years. I am married and have two dogs. I love spending my free time gardening, fishing, hanging with my wife and dogs or drinking a beer.  I have worked in the restaurant industry for over 23 years. I started my career with Old Chicago at the age of 16 and worked with them for 20 years. I had the joy of opening 5 new restaurants, trained over 90 managers and worked in 22 Old Chicago locations. After 20 years I left to work in one of Omaha’s local breweries as the production manager. It was a great opportunity and plenty of beer to drink! I have been a part of Biaggi’s for just a short time but I already feel like family here!! I look forward to what the future will bring.

Kevin Schlotfeld

I’ve never been much of a scholar.  It’s not that I don’t believe I’m intelligent.  I’ve always just been more motivated by my own passions.  And in that passion is the knowledge I seek.  All through my youth, I wanted to be a soldier.  After 9/11 I made my decision.  It was a long time from being 11 and watching the towers fall to the time when I was 18 and could act upon it.  I had to finish high school but as I said I wasn’t much of a scholar.  Therefore I had to spend some extra time getting my diploma.  The day after I graduated high school I started the process of becoming an infantryman in the US Army.   Being a Sous Chef at Biaggi’s has everything to do with that decision I made when I was 11.   We all work in an industry that requires a lot of sacrifices.  Those with true passion and drive will make it where they want to be.  And you’ll remember the moment you decided this is what I want.  I couldn’t be more excited and motivated with the direction this team is going.

Derek Roetzer

I was born into the grocery business, Mom’s family had 2 grocery stores growing up. They started as a meat market before expanding into full service grocery with one of the first full-service delis in central Illinois. I worked at the store from when I was born until I left for culinary school, doing any and all things! It sparked my interest in the food service!  Unfortunately, big box grocery came along and they decided to sell the store. I wish I could have had a chance at it before they sold it!

Culinary school led me to Lettuce Entertain You; Scoozi (Chicago), Tucci Benucch (Chicago & Minneapolis) and Tucci Milan (Chicago) – all high volume Italian restaurants – were my stomping grounds for 12 years. I meet this girl, Jeannine, in Culinary school. She has a degree in hospitality management and managed several McDonald’s units before deciding 2 of us in this business was not going to work, so she started her path towards self-employment. We became best friends, and in 1991 we got married. We were/are/always will be made for each other.  

After Lettuce I worked for a couple of local independent restaurateurs, followed by a couple of Corporate Dining companies. This was when Madeline (June 2001) and Chase (November 2002) entered our lives.

In June of 2003, I joined Biaggi’s with an all-in mentality; “let’s see where it takes us!”. I started training in Eden Prairie and by the end of the summer, I had visited the Omaha location with my family and decided that was going to be my store (slowest store in the company at the time).  I spent the next 2 years in Omaha, then was asked if I’d be interested in going to the Maple Grove location. Being one of the highest volume, and the newest store in the company was a little intimidating, but I had higher volume experience and felt I could comfortably adjust, so back to Minnesota we went.

During this transition, Jeannine and I were separated for about 2.5 months over the Christmas holiday. It was the hardest time of my life. Skip through the middle and along came Peyton (November 2007).  Maple Grove was brief (a little over a year), however, Mark and I won the equivalent of the MP/CP of the year award. I was then asked if I would like to come to Bloomington to run the corporate store. All-in, all the time was my response. So back home to central Illinois we went. I was excited, Jeannine was nervous. We were moving somewhere she had never been, with 3 young children, no support, and a husband working in a high volume restaurant!

Fast forward and we built a solid base for our family. All of the kids are well respected in their classroom, activities, and by anyone they meet!  Jeannine has built a great support network (our village). Me… I just keep getting older, but better!!  

 

I’ve always had a passion for this business, going back to when I was 16 years old as a dishwasher and bus boy. Seeing the interactions and the energy of the staff, I just knew that this line of work was for me.

I worked my way through the ranks of several different restaurants, getting my first management opportunity with a little local place here in Bloomington called Diamond Daves in College Hills Mall as a bartender and manager. Afterward, I moved to Ruby Tuesday and ran the kitchen, then transitioned to FOH where I met my current wife Britney, who was a hostess/server (for the record, we never dated when she worked for me). Next, I moved on as general manager of FlatTop Grill for 5 years. I opened the location here in Bloomington and then ran the Champaign location after that. I was looking to get back to my hometown and when an opportunity came up with Biaggi’s, I jumped on it because I knew, despite not being GM right away, that if I put in the hard work that it would be recognized… and the rest is history.

 

2019 Q1 Spirit Award – Michael Johnson

With Maple Grove losing 2 front of house managers within a few weeks of each other we put out a call to see if anyone would be able to spend some time in Minneapolis supporting Gary while we got his new manager trained and ready to roll.  MJ offered to do whatever we needed and ended up spending 3 weeks in Minnesota.  His willingness to help was greatly appreciated and his willingness to be away from home for an extended period went above and beyond normal expectations. Of course, MJ will say it was no big deal………but it was!

2018 Q4 Management Team – Algonquin

Please join me in congratulating Jason Chablani and Jessica Wilson in their achievement of winning Partner Team of Quarter 4, 2018!

Jason is going into his 9th year as the Managing Partner of our Algonquin location, but he’s been with the company since September of 2006. Jess is about to finish up her FIRST year as the Chef in Algonquin and has been with us for just 1.5 years. What an achievement for the two of them! Jason and Jess have battled a tough market with a lot of ups and downs in recent history. Most impressive to me is their fortitude and tenacity getting past a new restaurant opening right next door to them in 2017. The brew-house concept is known for their heavy marketing and aggressive discount campaigns, so for our Biaggi’s to come out of their opening year better than before counts as a total WIN in my book! My favorite thing about working with Jason and Jess is how loyal and devoted their teams are to them and to their success. It’s a true family with the team in Algonquin and you can feel that from the moment you walk in the door – I think our guests can too, and maybe that’s part of the recipe for their recent success. I can’t wait to see how the team in Algonquin continues to develop and grow, with Jason’s tenure and wisdom at the helm and Jess’s energy, enthusiasm, and drive to succeed right behind.

2018 Q3 Spirit Award – Chris Schwab

Craig Gareiss, Ashley Bennett, and I nominated Chris Schwab, FOH Manager in Deer Park, for the Spirit Award winner of Q3 2018. Chris has been with Biaggi’s since February 2007; he started with us as a Host in Naperville, moved into a Serving position, was promoted to a FOH Captain/Bartender and on November 30th, 2011, Chris earned a FOH manager position in Deer Park. Chris is no stranger to the predicaments of a restaurant and is not afraid of adversarial conditions and the difficulties that come along with them. When he joined me in Deer Park in 2011, we were heading into the holiday season at 100 mph and had just turned over the entire management team (partially due to Deerfield’s opening). We tackled that challenge together with our blood, sweat and, yes, a few tears and now the ‘new regime’ in Deer Park has gotten to experience what an amazing manager Chris is.

Deer Park has had many challenges over the last year, again, turning over most of the management team, but Chris has remained the steadfast pillar to this location. Whether it’s bailing out Pizza or Expo, working a shift on Pantry, digging the service well out or keeping the entire dining room bussed during a fluke rush – He’s there to get the job done and he is a power-house, both BOH and FOH. (I walked into Deer Park on Friday to find him scheduled as the closing Sous and slinging pans on Sauté!) Chris works well beyond his title of Front of House Manager on a daily basis, mostly self-taught. He is truly a self-motivator and it is an inspiration to those around him; he sets a precedent for all the managers and Sous that he has helped train in Deer Park over the years.

Chris has participated and led multiple corporate projects through working with Kevin, Ashley and myself over the years: from training materials for food and beverage, to wine list updates and cocktail recipes, from researching liquor laws and helping create banquet menus and manuals; most recently, Chris was integral in testing the Liquor Pricing Model with Kevin Reed – You name it and he’s probably played a role in it!

Chris has never asked for anything and has been the most loyal teammate Ashley, Craig and I could have wished for, I don’t know how we got as lucky as a company that Chris choose us – and that he has stuck with us through some very hard times on the ‘battlefield’. We would like to reward Chris in this small way for his tenure, his fortitude, his passion for our employees, our restaurants and our guests, his patience and his partnership throughout his career with us – We hope it lasts for years to come and look forward to watching his career with us continue to grow!

2018 Q3 Managing Partner – Colorado Springs

Jeff Jenkins joined the Biaggi’s team over 13 years ago.  He has been the MP of the Colorado Springs unit for the last eight years.  Jeff has an incredibly impressive track record.  In fact, some would say that he is making records that will never be broken.  For example, Jeff and his team have had six continuous years of sales increases (year over year) as well as six consecutive years of higher profits.  I am most proud of Jeff for winning the MP of third quarter because he did it without having a CP in the unit for 11 out of the 12 weeks!  We all have been short, and we all have pitched in with the extra effort and hours.  However, it is rare feat to make your sales, and beat your PBA, when you are without a chef partner.  There is still a lot of work to do in CS as this kitchen is being rebuilt with new personnel and leadership.  I have great faith that Jeff, Charlene, Chris, and Brian will steer us through the upcoming challenging periods.  We all are looking forward to having our new CP Ken McElroy join the team in Colorado Springs.  I would not bet against Jeff adding a seventh year in a row to his string of sales and PBA.

2018 Q2 Spirit Award – Troy Tomlinson

We often celebrate individuals who have achieved singular or periodic extraordinary results. Other times we recognize individuals who have been consistent and longstanding stalwarts of the Biaggi’s culture. Troy Tomlinson is both of these and more. A few of Troy’s notables:

· By every metric you could think of, Troy runs the busiest, most complicated kitchen in the company. Highest food sales, highest banquet sales, highest ToGo & Pronto, most catering/offsite, highest wine dinner sales. The list goes on.
· He is the literal definition of a local celebrity chef. He is recognized as THE Top Chef in Bloomington/Normal, both anecdotally (he is a face that many in the community recognize and know) and through years’ worth of community based accolades and awards.
· His charitable involvement and contribution to the Bloomington/Normal community is simply too broad in scope give an adequate accounting of. It would be an understatement to say that he is very active in community support and fundraising.
· He’s trained many.
· He’s field tested much.
· He’s facilitated or supported a ton of menu development and ideation.

In the interest of brevity (though not for lack of content), I’ll stop the list here.

Troy is simultaneously a General and a Soldier. He’s led Bloomington’s kitchen into battle for 11 years (in Eden Prairie as a Sous and Omaha & Maple Grove as CP before that). But he’s also a guy who never shies away from the trench work; providing an exceptional example of the behaviors and skills he expects and holds accountable.

Troy celebrated his 15th Biaggi’s anniversary this month, as he does most of his incredible accomplishments; quietly, with dignity and restrained fanfare. I suggest we make some noise and toot some horns that he would never do himself.

2018 Q2 Partner Team – West Des Moines

I am very excited to announce John Leiendecker and Matt Mickle as our Partner Team for the 2nd Quarter. They took over as Partners of the West Des Moines location in January of 2016 after almost six years working together in the BOH.  Together they have worked hard as Partners to figure out the intricacies of our day to day operations and to continue to improve on their standards period by period.  I look forward to watching them earn this award on a regular basis for many years to come!  Please join me in congratulating John and Matt as our 2nd Quarter Partner Team.

2018 Q2 Spirit Award – Lorelei McGee

As you all know, we closed the Rochester restaurant during the first part of Quarter 2.   I can personally tell you this was the hardest thing from an emotional stand point that I have ever been a part of in my restaurant career.  I cannot even begin to imagine how hard it was on those who worked side by side with the managers, chefs, staff and guests every day.  With that in mind, I believe that Lorelei McGee is truly deserving of this Quarters Spirit Award. 

I made Lorelei aware of the Rochester closing decision shortly before the actual date and well before we were ready to announce it to the local staff.  After her initial surprise , she looked at me and said “I understand the decision, what do we need to do to make this as smooth as possible for everyone.”  She had to carry that knowledge with her for over a week while still staying positive and keeping her focus on the day to day responsibilities of the job.  When the day came to shut down, Lorelei was the one who made the calls to our long time employees to break the news and she was the one who greeted all of he staff as they met at the restaurant to get the final information we had to share with them.   She was able to put together a solid group of managers and staff to help with the cleaning, emptying and turnover of the restaurant to the landlord and had 95% of the this accomplished in the first 4 days of being shut down.  The attitude these people brought into the building throughout the whole experience was a direct reflection on Lorelei and would have made any member of Biaggi’s proud.   I know in her heart Lorelei will not think of this as a great experience but to me her attitude and actions during this difficult time really showed how much she cares about her people and how well she represents Biaggi’s.

2018 Q1 Partner Team – Carmel

Please join me in congratulating Jay Hibbert and Mike Carlson on their achievement of Partner Team of the Quarter for Q1 – 2018.

Jay joined Biaggi’s in May of 2014 and is coming up on his 4th anniversary with Biaggi’s. Mike joined us just a brief year later in September of 2015. Together, these two have weathered many a restaurant storm and, after a perilous career with Mac Grill prior to joining Biaggi’s, these two are some of the best in “Guerrilla Restaurant Management”. Their war stories are some of the best that I have ever heard! Needless to say, these guys are true Brand Ambassadors for Biaggi’s. They’ve seen the other side of restaurants and appreciate what a great company we are to work for. Our Carmel location has not been without it’s challenges; from opening this restaurant, we have had to endure extreme traffic and construction concerns. Now, almost 6 years later we are thankfully and gratefully on the other side. Jay and Mike have always showed up with smiles on their faces and a Mountain Dew in their hands, ready to dig in to get the job done. Congratulations again Jay and Mike!

2018 Q1 Spirit Award – Chelsea Powell

Chelsea is one of the most dedicated people I have had the pleasure to work with.  What she has done in quarter one exemplifies great leadership.  She decided, after we lost our CP, that she was going to learn our kitchen just like a CP would.  She immersed herself doing everything she could to educate herself on the full operation of the kitchen. She got her hands into everything!  This was all done during the most challenging time in our kitchen, as she was short a CP and a sous!  She constantly worked six days a week, and never complained.  We didn’t lose a single member of the kitchen staff, and I know her management team all raised their game to follow her lead.  This week, our new Chef Zach Link will arrive in Omaha.  I am so excited to see where Chelsea and Zach can take this restaurant. 

Chelsea, you continue to impress me. Thank you for all your hard work and dedication.

2017 Q4 Partner Team – Naperville

Ashley Bennett started as an hourly employee in Algonquin in May of 2007. She’s since grown from FOH Manager in Algonquin to Managing Partner in Naperville (and has recently transferred to Deer Park). Nate Smith started his Biaggi’s career path as a BOH hourly employee in Deer Park’s kitchen in September of 2009. He was promoted to sous chef there and then to Chef Partner in Naperville.

2017 was a banner year for Ashley and Nate, and Naperville. As a team, they exceeded budgeted sales and PBA in every quarter and posted the highest annual sales AND PBA in Naperville’s history. This was accomplished through a combined commitment to exceeding guests expectations and delivering an exceptional food/service/facility experience while simultaneously creating a motivating and fun environment for their employees. Though everyone in Naperville was sad to see Ashley leave, we are all excited to watch her and Nate’s continued success. We are definitely a better company with them as a part of.

This year Pat made a commitment to find and develop internal candidates to move into captain roles and eventually be ready to help support other units and be in line for Sous Chef openings as they occur. He has a solid team so he know this work is going to help the entire company as we strive to find great people to put into our management positions. In the 4th quarter, this commitment really came together and has allowed Pat and his Davenport team to be able to lend numerous weeks of support to the field in Ridgeland, Des Moines and Middleton.

To finish out the year, he has a captain that is now promotable and one nearing the point where she will be available to help support outside of the unit. In November, Pat himself was able to turn over the reins of his store to his Sous’s and Captains so that he could make an extended trip to Ridgeland (his second this year) to continue and help get that BOH back on the right track. At the end of his time there we were in a much better position but Pat realized they still will need continued follow up as we get a new chef trained and in the building and he let me know he felt it made sense for him to be the guy to go back… so if you need him, call Ridgeland as he’ll be there for the next 2 weeks!

I hope everyone is having an absolutely wonderful Holiday Season thus far.

I want to jump the gun a little and wish all of you a very very HAPPY NEW YEAR, but I also wanted to take this opportunity to thank each and every one of you for a successful 2017. We have so much to be thankful for here at Biaggi’s and I am particularly thankful and proud of our amazing leadership team … both in the field and here at corporate.

As we go through the busy holiday season, I am often reminded of the tremendous personal sacrifices that this industry requires of all of you and the unselfish manner in which you make these sacrifices. You are professionals in every sense of the word and, in my opinion, the strongest leadership team in the industry.

Giving Tree

Unfortunately, not all children wake up at home on Christmas day to gifts under the tree. Some children wake up to the sights and sounds of a hospital and Christmas just doesn’t feel the same.


For the past several years, Charlene Long has hosted a “giving tree” at our location which provides wishes for many of these children. With the contribution of staff, guests and local organizations, Charlene has gifted hundreds of families that without her help wouldn’t be able to afford gifts for these children. It is a heartwarming event to see the annual happiness she brings to these children on the day they receive their gifts with an in store Christmas party – complete with Santa, Mrs. Clause and their Elves.

 


Charlene truly reflects the true meaning of Christmas.

2017 Q3 Partner Team – Omaha

Congratulations to Chelsea Powell and Aaron King from Omaha as the Q3 Partner Team of the Quarter!

Chelsea and Aaron have been working under the same roof for 5 years. Aaron has been with us for 16 years! Chelsea is just completing her first full year as the GM of Omaha. One of the things that I am most proud of is that team Omaha leads the company with the largest YOY increase in gratuity. They are .48 up YTD and the next closest unit is up .24. We all talk about creating a fun upbeat environment to work in – they live it! Both Chelsea and Aaron have had to work many extra hours as we have been short 2 sous chefs. I have to give Aaron a lot of credit, as his food has stayed top notch! They are finally starting to hit their stride with a lot of new hires and we are excited to see the training pay dividends. It takes more than a year to forge a great partnership, but I like where these 2 leaders are headed. Please join me in recognizing Chelsea and Aaron on this great accomplishment!

 

Chicago Half Marathon

On Sunday, September 24th Chef Partner Craig Gareiss completed the Chicago Half Marathon … and proudly represented Biaggi’s by sporting a logo-ed shirt. Tavis and Justin are a great example of a true partnership in our company. They have been through a lot, as Perrysburg has actually only been fully staffed for one full month since their start together in September of 2015. Justin had the pleasure of getting to Perrysburg to battle the storm a few months prior to Tavis arriving. These guys do not back away from a challenge; more often, they run right into the flames. Two years after arriving in Perrysburg, they are thriving in their respective positions, while challenging the lines between FOH and BOH every day. Both of these gentlemen are highly respected for their success in their positions, but mostly regarded for their willingness to always lend a hand when anyone needs help. As states the ‘Biaggi’s Way’, the easiest way to create a great team is to ask for help when you need it and give help when you can… These two certainly have created a great team in Perrysburg, they are a great team for Biaggi’s and are great partners to one another.

Mike Carlson–  Mike was lured away from Tucanos Brazilian Grill to Biaggi’s by Jay. They worked together, many years ago, at Macaroni Grill for several years. They went their separate ways and now have re-joined for a second tour. He began his career with us in September of 2015 as the Chef Partner and it was a natural fit from the beginning. Jeff joined the Biaggi’s team in May of 2005.  Jeff came to us as a dining room manager after 25 years with Darden Restaurants.  Frankly, he was overqualified for the position, but we had no other openings and we wanted him playing on our team!  It was often said that by having Jeff there it was like having another MP in the restaurant.  Jeff finally got his chance when he was promoted to MP in October of 2010.  For Jeff there was no looking back – he dove in and started to build a better team.  Jeff is a career restaurateur and he continues to work hard to build our reputation in the Colorado Springs market.  From the looks of the second  quarter’s sales, where they were up almost $51,000 over budget, his strategy is gaining traction.  When Jeff is not making Biaggi’s go – he can be found hanging outdoors with his wife Susie and their dog.  He is a die-hard Rockies fan and he bleeds NY Giants blue!  Tom Carroll
After graduating from Illinois Wesleyan University, Tom Carroll joined Biaggi’s in 2001 as a Bloomington line cook. His hard work, results and dedication were rewarded when he was promoted to sous chef in 2003. Tom left Bloomington for Colorado Springs in 2005 as a newly promoted chef partner and quickly asserted himself into a very challenging situation.  Since that time, Tom has consistently posted some of the lowest BOH labor in the chain and regularly ranks among the top in COS control. His mantra of “make it happen” has resulted in a happy, cohesive and dedicated kitchen team. Tom has also been a chef who has reached out to his chef peers seeking operational assistance and providing support to this same group as well.  The way Tom treats his team is reflected consistently in some of the lowest turnover in the company.  When Tom is not working, he enjoys hiking the local terrain or crunching baseball stats.

Sonya began her second tour of duty with Biaggi’s back in May of 2010 and has taken no prisoners since! She is beloved by her team and she always credits them with the success in Evansville— not entirely true Sonya! It takes a great leader too. Ms. S. is also playing a driving role in the revamping of all the Biaggi’s training tools. When not at Biaggi’s, Sonya enjoys golfing, boating, catching an occasional Cubs game and is an avid University of Kentucky fan. (Don’t ever say anything bad about her Wildcats!) Casey started with Biaggi’s in October of 2005 as a Manager in Deer Park.  Casey transferred to our Naperville location in 2008 before becoming the Managing Partner of Deer Park in the summer of 2011.  In her career with Biaggi’s, Casey has taken on numerous projects and initiatives in many areas.  She continues to drive and field test initiatives with the intent of making not only Deer Park a better restaurant, but Biaggi’s as a whole, a better company.Chad Melinger
Chad started with Biaggi’s in December of 2010 as a Sous Chef in Deer Park.  Chad has since been a part of the opening of Deerfield, as a Sous Chef, until he was promoted to Chef Partner there.  Chad transferred to Deer Park in Q1 of 2014.  Chad has a real and genuine passion for food and has spent much of his career before Biaggi’s exploring his passion.  Chad is a graduate of Kendall College’s Culinary Arts program and has spent many years in the kitchens of some very respected chefs, including a 6 month stint in France.  Chad has been very involved in moving our culinary systems and food forward with food development and tastings.

Both Casey and Chad are accomplished individuals in their own right, respected by subordinates and peers alike.  But what makes them even better is their commitment to each other and to each other’s success.  It is not uncommon to see Casey in a chef’s coat or Chad roaming the dining room.  Chad and Casey are the text book example of what it means to be “Partners”.

We were met by a limo at the airport and taken to the Michelangelo Hotel on Times Square. The hotel could not have been in a better location and was truly magnificent. We then met Eric who joined us on a limo ride to the Banfi Estate in Old Brookville, Long Island.  A 60 room manor once owned by the Vanderbilt family, the estate was breathtaking. We were given a personal tour by Neill Trimble (Vice President of Advertising), Sandra Krut (Senior Brand Manager) and Mrs. Mariani herself! I cannot begin to describe the majesty of this estate, and sheer splendor of being surrounded by so many beautiful tapestry’s, fireplaces and even sitting down at a 1000 year old desk! We were then treated to a wine dinner prepared by Chef Thomas Schaudel. Chef Schaudel worked some serious magic for dinner highlighted by roasted Filet Mignon paired with the Belnero 2011.

Saturday Molly and I had the day to ourselves to explore New York. This included Chinatown, Soho, Little Italy and Times Square (I ate a lot!). This was followed by an amazing dinner at La Masseria in Manhattan. This was followed by a performance of Wicked on Broadway chosen by Banfi because I mentioned Molly had always hoped to see it. 

Sunday was a day to ourselves that included a trip to enjoy the Harlem Gospel Choir and restaurant row.

I could write a short novel about our trip but I will spare you! I do want to express my sincere gratitude to you for awarding this trip to Molly and I. And I would like to sincerely express my gratitude to the Banfi ‘family’. Molly and I expected to have a good time but nothing like what we experienced. It isn’t easy to over deliver when flying us out for a weekend in Manhattan but Banfi did all week-end.

Kevin Mitts
Kevin joined the Biaggi’s team in January 2007.  He moved back to his home state of Colorado after owning his own restaurant in California.  He hit the ground running and quickly built a solid team and made that restaurant a real fun place to be.  An entrepreneur at heart, the match for Kevin with Biaggi’s is a solid fit.  
This past quarter Kevin and
his team were 7.4% above their sales budget.  Kevin is a home brewer, a die hard Broncos fan, and has a wonderful family surrounding him as well. His wife Tamara, son Bryce,
and his wonder dog Cooper all make his life complete.
Scott Kunz
In my region, Scott is about as close to a “lifer” as you can get.  Scott began his career with Biaggi’s in October of 1999.  He started with us as a line cook in Champaign and worked his way up to sous chef working in multiple units.  He earned the top spot as the CP when we opened the Maple Grove unit.  Scott has participated in many restaurant openings and has given his time selflessly often for 6-7 weeks at a time.

He has visited many kitchens and helped many chefs in their time of need.  Scott has a great family to support him at home as well.  His wife Claudia and their two sons, Dominick and Caleb, keep him busy.
When Scott has time away from work he enjoys working on setting up his new home, his new camping hobby, and spending time with his family

Jeff Jenkins and Tom Carroll

 Jeff and Tom are the very best in Q1 2014. 

Jeff Jenkins
Jeff joined the Biaggi’s team in May of 2005.  Jeff came to us as a dining room manager after 25 years with Darden Restaurants.  Frankly, he was overqualified for the position, but we had no other openings and we wanted him playing on our team!  It was often said that by having Jeff there it was like having another MP in the restaurant.  Jeff finally got his chance when he was promoted to MP in October of 2010.  For Jeff there was no looking back – he dove in and started to build a better team.  Jeff is a career restaurateur and he continues to work hard to build our reputation in the Colorado Springs market.  From the looks of last periods sales, where they were up almost 24,000 over budget, his strategy is gaining traction.  When Jeff is not making Biaggi’s go – he can be found hanging outdoors with his wife Susie and their dog.  He is a die-hard Rockies fan and he bleeds NY Giants blue!  Tom Carroll
After graduating from Illinois Wesleyan University, Tom Carroll joined Biaggi’s in 2001 as a Bloomington line cook. His hard work, results and dedication were rewarded when he was promoted to sous chef in 2003. Tom left Bloomington for Colorado Springs in 2005 as a newly promoted chef partner and quickly asserted himself into a very challenging situation.  Since that time, Tom has consistently posted some of the lowest BOH labor in the chain and regularly ranks among the top in COS control. His mantra of “make it happen” has resulted in a happy, cohesive and dedicated kitchen team. Tom has also been a chef who has reached out to his chef peers seeking operational assistance and providing support to this same group as well.  The way Tom treats his team is reflected consistently in some of the lowest turnover in the company.  When Tom is not working, he enjoys hiking the local terrain or crunching baseball stats.

Jason Chablani
Jason was hired on 09/25/2006 as a FOH Manager in Algonquin and promoted to MP in the summer of 2010. Jason is passionate about Italian Wines, “crunching the numbers” and taking the dissenting opinion on every single debate. Jason is married to an Irish lass, Molly, and father to 2 little leprechauns. In the 2 & ½ years as MP in Algonquin, Jason has seen more than his fair share of challenges and adversity, and has met those challenges with a great sense of humor and humility. Jason has persevered and survived by outlasting his competitors in a competitor rich environment and is a case study in the merits of tenacity.

Christian Garcia
Christian began his Biaggi’s career on 02/13/2007 as a line cook in Naperville. He’s since spent equal time toggling between Algonquin and Naperville, until being promoted to sous chef in Naperville in the summer of 2010. Christian was a member of the training team for the Carmel opening in the fall of 2012 and was the interim chef in Algonquin until accepting the permanent position. Christian is married to wife Morgan (another successful Biaggi’s love connection), enjoys participating in the frequent, yet unresolved debate of “Marvel vs. DC” and has never turned down the opportunity to help a friend or co-worker.

After a very challenging 2012, which saw the departure of 2 CPs, 1 Sous and 1 FOH Manager; 2013 is off to a great start in Algonquin. Jason and Christian have formed a cohesiveness which has borne obvious and immediate results. Add to that an exceptional cast of supporting characters in Ashley Bennett, Liz Story and Tim Kline and this team has Algonquin’s course plotted towards a great year.

Matt Oliver and Patrick Trainor

Matt Oliver|
Matt was hired to be the managing partner in Davenport in November 2011.  He quickly asserted himself and forged a bond with the long-term management team.  Matt is a PROUD Hoosier and a diehard Cleveland Indians fan (sorry Matt).  When Matt is not steering the ship at Biaggi’s in Davenport, he is spending time with his wife Melanie.  Matt loves the game of golf and knows his way around a pool table.  He is the first guy to put his hand up when it comes to trying a new idea or piloting a new project.  He has quickly immersed himself in the local community and we are fortunate to have such a fine leader and partner.
Patrick Trainor
Pat started his career with Biaggi’s in September of 2001.  Pat grew up not far from the restaurant.  He has also lived on the west coast and is a proud marine.  Pat is happily married to Rhonda and has a daughter named Kaitlin.  When Pat is not running the culinary show at Biaggi’s he loves spending time in his gardens.  He has a HUGE cookbook collection, and when time allows, he loves to get out on the golf course.  Pat is one of our top tenured chef partners, and many chefs have had the chance to work with him.  He has made a big impact on the young culinary students from the local community college and consequently is very well known in the surrounding community.  Please join me in saluting and congratulating Pat for yet another award in his distinguished career!

Gary Chanen and Fernando Abundez

Gary Chanen
Gary was hired on 7/21/04 as the MP for Eden Prairie and will be celebrating 9 years with Biaggi’s very soon! We call Gary “the mayor” because he seems to know everyone in Eden Prairie. In fact, at any given time he will pull out a stack of business cards from his pocket and refer someone to a person that can help them with their particular situation. Gary has also been the recipient of the small business person award in Eden Prairie. Outside of work, Gary stays active with his family, dogs and his commitments with the Rotary. Gary has 2 sons – Ryan is entering his sophomore year of college and Austin will be a junior this fall in high school. His true love outside of his wife Tara has to be his horses. Gary has bought and sold numerous thoroughbreds, and I believe one of his horses is going to make it to a major race one day! Please join me in congratulating Gary for adding another award to his collection.
Fernando Abundez
Fernando started his career with Biaggi’s on 4/06/02 as a cook in Eden Prairie. He was promoted from captain to Sous Chef in January of 2005. In 2008 Fernando became the Chef Partner and he hasn’t looked back since! Fernando and his wife Gloria have enjoyed 9 years of marriage. Twice a week Fernando enjoys watching his 8 year old son Andy play soccer (rumor has it he is very talented). Fernando also loves hanging out with his 8 month old daughter Vanessa. When Fernando is away from work, he loves watching soccer and cheering for his favorite team Barcelona. We are very blessed to have such a great Chef Partner!

Sonya Gray
Sonya began her second tour of duty with Biaggi’s back in May of 2010 and has taken no prisoners since! She is beloved by her team and she always credits them with the success in Evansville— not entirely true Sonya! It takes a great leader too. When not at Biaggi’s, Sonya enjoys golfing, boating, catching an occasional Cubs game and is an avid University of Kentucky fan. (Don’t ever say anything bad about her Wildcats!) Our sincerest congratulations go out to Sonya and her team.

Ben Jutzi
Ben started with Biaggi’s back in May of 2010 and was promoted to Chef Partner in October of 2011. Ben hit the ground running with his promotion and his results showed it immediately! Ben is an avid organic gardener, home brewer and is always looking for the next great food and beverage pairing. While tending his garden on his time off, Ben loves to show his adorable 5 year old daughter, Annabell, how her food grows. Please help me in congratulating Ben on a job well done!

Mike Whitcanak

 

 

2017q2spiritmw_400Mike Whitcanak has been working hard in Davenport location since 2006.  Despite over 10 years of service to Biaggi’s, he is somewhat of a short timer in that kitchen with Dustin and Pat predating the majority of those working in the field.  As a sous chef he has worked hard to teach and maintain our standards for quite some time.  In Quarter 2, Mike lent his knowledge and support to both West Des Moines and Omaha.  He has made extended stays to both locations to help support a Sous chef maternity leave in West Des Moines and to help Omaha as they were rebuilding their BOH staffing.  Both of these stores sent back rave reviews of Mike and his efforts. In fact John Leiendecker even mentioned how, “Mike often thought like he did!”.  Strong praise from an MP who was also one of our most respected Chef Partners.  As we finished out the Quarter, Mike volunteered to return to Omaha for another extended support stint, as Minh moves to our Rochester location.  Mike’s willingness to travel and his positive attitude has been much appreciated, and we have enjoyed watching him grow as he supports Biaggi’s!

Tom Carroll

 

 

2017q1sptom_400Tom Carroll began his Biaggi’s career in July 2001 as a grill cook in our Bloomington flagship restaurant. As a graduate of Illinois Wesleyan University, his passion was always centered on teaching, writing and business.

In March of 2005 Tom was promoted to Executive Chef, moved west to Colorado Springs and has resided here ever since. In the years following, his undeniable passion for organization, leadership, high morale, service and plate execution has allowed the restaurant to become one of most respected restaurants in town. In addition, Tom has become the bench mark for BOH performance. This I see reflected in his labor, costs, and five straight years of SSS growth with a sixth year well on its way.

Always willing and available to take time to talk to staff and guests, be it personal or professional, Tom strives to make an impact on a daily basis. His assistance and commitment in mentoring and guiding his peers throughout the chain only enhances this style of support while making us a stronger company.
Outside of work, you can find Tom with family or on the beautiful hiking trails of Colorado.

spiritlorelei_400Lorelei has had a very busy and well-traveled 4th Quarter. She began Period 10 serving as the lead manager in Davenport. When asked she quickly volunteered to travel to Omaha to serve as manager support for 3 weeks during Period 11 as they transitioned to a new General Manager. Two thirds of the way through that commitment I called her and let her know I had an opportunity to move across the country to become the new General Manager at our Rochester location. Without hesitation, she put her name in the hat and began the process which led to her promotion. At the beginning of Period 12 she hopped in her car with her dog Charlotte and drove 750 miles to Rochester.

She walked into a store that had just gone through a rough patch with manager turnover and was close to losing its mojo. In a little over a Period, she was able to get the attitudes and accountability back to where it had been, win over the local guests who have high expectations of us, and was able to get all of the staff who had moved on during the turnover to return to Biaggi’s.

 

Her spirit and belief in Biaggi’s went a long way to winning over a tenured staff and leading them back on track to representing us all to the highest degree. She has had a great impact in her short time in Rochester and I look forward to seeing big strides as she moves forward with her team.

Tim Moran

 

 

timm_400_02On September 3, 2014, knowing that we were in an extreme need for strong leadership in Ridgeland, Tim Moran asked to be transfered to the Ridgeland Biaggis. This was a high-volume unit in the midst of a lot of transition.

He uprooted his pregnant wife and two daughters to move 800 miles away to oversee a kitchen in which he saw great potential. Because of his dedication, he voluntarily left family support in Fort Wayne, a dialed-in kitchen and a solid quality of life to bravely take on this new challenge in Ridgeland.

Year-to-date, his kitchen is .3% under budget in FCOS, .3% under budget in BOH labor and has run less than $600 in YTD overtime in the back of the house. His team is so stable that Tim has begun learning the systems in the front of the house, where he is frequently running shifts. Additionally, Tim has been assisting with leadership in the kitchen in Evansville.

As if this weren’t enough for a full life, Tim and his wife Alyssa are in the process of adopting a beautiful 14-month-old girl from Kyrgyzstan. Born with a cleft lip and palate, this little girl was abandoned by her mother after the birth. She was sent to a special needs orphanage, where she awaits the finalization of the adoption. Tim and Alyssa have made three trips for this process: one for 10-day bonding, one for a court hearing and they are headed back overseas for their final trip to pick her up on September 30th.

 

This man exemplifies spirit and determination for the cause of good!

Chelsea Powell

Chelsea Powell continues to impress us with her dedication to Biaggi’s.  With the time drawing near for the move to the Middleton location, we knew it was going to get very challenging.  We knew that we needed additional support as this team would have some new challenges when it opened.  In addition, we were going to open on Mother’s Day weekend.  When the question was asked, “Who can come up here for a week or two and provide support and coverage?”, it was quiet (crickets).  In fact, only one person said “I would like to help out”.  

Chelsea came up and worked 13 straight days to help ensure a successful opening.  I realize that no one wants to give up their talent on Mother’s Day, so I have to thank Jeremy as well, as I left the decision to him.  To his credit, he did not hesitate.  He said, “They need the help and we will make it happen.” The last point I will add is that Chelsea has a toddler son, and she took her second Mother’s Day away from him to make sure we had the support that we needed.  

Like many others, she could easily have said “no” as the timing was less than ideal.  But to her credit, she wanted the opportunity to help and be involved in a new restaurant opening.  Middleton has been a huge success and that management team deserves a lot of credit.  Chelsea played a huge role in this opening and we salute her with the Spirit Award.

Gary Chanen

Gary has done an incredible job being the MP in 2 units, Despite the fact that the landlord let the word leak out that our space in the EP Mall was available to lease, he retained almost his entire team right up until we closed – this is no easy feat! He then ran point on the closing of our EP unit and all of our deadlines were met. I was overwhelmed at the loyalty that he and Fernando had developed with their team in EP. So many people volunteered to assist with the closing and clean out of our unit. When Gary told the team that he would be transferring to MG, many of our staff transferred and took the much longer commute to stay with Biaggi’s. Gary left EP on Feb 3rd and reported in MG the next morning on Feb 4th. He has worked tirelessly to really get the financial momentum moving in MG. His net sales were up almost $51K to budget, his PBA is a full point over and his operating profit is a hair shy of being $19K over budget for Q1. Needless to say, there were many 6 day work weeks in his calendar. I am excited to see what he accomplishes in MG this year!

Charlene Long

So a young child was spotted pulling Angels off our Angel Tree, Charlene approached him, as she guards that tree with her life, she introduced herself and explained that the angels were for children who were sick. The boy pointed to his brother and said, “he is in remission with blood cancer”, and that we were the only reason they had a Christmas 2 years ago.  His family took 3.

Charlene’s efforts led to gifting 125 children/ families last year. Has to be over 500 running since its inception 4 years ago. 

We have guests come in – regularly, not to eat, but rather to join the cause and gift an angel. 

A professional Santa helped hand out the gifts last Christmas while a professional cartoonist drew their pictures – also for free.  The boy who got a bike was so happy it would bring tears to your eyes! The wine room was filled (literally) with gifts – SF financial (regular banquet group) brought a pick up truck FULL OF GIFTS!!  All supplied by their company and many of their clients. People came by to just to drop off money or gift cards – crazy community support!!  It was amazing how many regular guests, current employees and even termed employees showed up for the wrapping day. Very heart warming.

Charlene is truly commitment to this community. Her efforts is rapidly becoming a Colorado Springs legacy. Seriously unbelievable guest support!!  The goodwill that she has generated is immeasurable.

Andrew Nicholson

Andrew Nicholson – In the need to help support Perrysburg during the management exodus, Andrew has been invaluable in his selfless support of the unit and remaining team and staff.  In total, Andrew spent over 50 days, in Perrysburg, away from his family and his own unit.  In that time, Andrew was able to provide support, coaching and development to both the FOH and BOH equally; a unique skill set which his experience as a Chef prepared him for.  To say that Andrew helped get and keep Perrysburg pointed in the right direction is doing a disservice to this gargantuan effort.  Additionally, with as many visiting partners and managers as Perrysburg’s had in the past 5 months, Andrew was the “go to” central and cohesive resource providing clarity where there was confusion.  He has truly been a rock for Perrysburg.

Shawn Snow

Our Chef Partner Shawn Snow is originally from Colorado and was introduced to cooking and restaurants early in his life.  His father owned and operated a restaurant. As Shawn grew up, he could see first-hand the hard work and dedication it took to run a successful operation.  This work ethic and dedication continues to be a strong part of Shawn’s makeup and has propelled his culinary career.

Shawn took an opportunity early in his career to work as a Sous Chef in Eaton Colorado’s Country club for six years.  During this time, the opportunity and environment allowed Shawn to get a taste of working in a kitchen where the menu was chef driven and where there is an emphasis on quality with each and every dish.

After his experience working at the Eaton Country Club, Shawn started his career with Biaggi’s in 2006 as Sous Chef in Loveland Colorado.  Even back then, Shawn was always willing to help out, and he moved to West Des Moines from 2007 to 2008 where he worked directly with Chef John Leiendecker.

Shawn loves Colorado where he grew up.  If you asked him, he would say that the Denver Broncos are the best team in the NFL and the scenery and backdrop of the state compete with no other.  He will also say that the leadership skills and dedication he learned from his time working with the different Biaggi’s culinary teams has proven to be invaluable.  He returned to Eaton Country Club as Executive Chef for several years before coming back to Biaggi’s in the Spring of 2011.  Once again, he worked directly with Chef Scott Kunz and the team of which he had begun his Biaggi’s career.

It was when Cedar Rapids was in need of a Chef Partner in the Fall of 2013 that Shawn once again was happy to step up and use everything he has learned to help make our Cedar Rapids location drive to be it’s very best.  Shawn is always willing to help and has continued to make an impact with Biaggi’s by doing just that. 

 

When not at work, Shawn is all about spending time with his pets.  He loves animals and has two cats named Mr. Kitty and Polly.  He also has a wonderful dog named Samson whom he adores.  He enjoys sports and is incredibly knowledgeable about any and all current events in sports.  He  will gladly offer his unbiased opinions as well!  He likes cars and drives an awesome white Dodge Challenger.  Above all, he is a great partner, and I really appreciate his hard work and dedication to this team.

Pat Trainor

Chef Pat Trainor, originally from Davenport, began cooking at a young age.  He had his first paying cooking job at 12.  After graduating from high school here in Davenport, Pat spent time in the Marine Corps.  The Marines gave Chef Pat a chance to travel much of eastern Asia, including Okinawa, Japan, and the Philippines.  The Marines took Pat away from Iowa, and landed him in California.

After the Marine Corps, and a brief time at a recording engineering school in Florida, Pat returned to California. Pat worked in several different restaurants, becoming the manager at PIZZA MY HEART in Santa Cruz, CA.  Pat also played guitar in the band Quasi Stellar Object (QSO), but decided he was a better chef than guitarist, and focused his pursuits in the culinary field.

Pat was introduced to a more “chef driven” kitchen at Papa’s Church, in Santa Cruz.  It was during his time in California that Pat had the opportunity to work with several different chefs, until getting his first executive chef position, at the Santa Cruz Sports Bar and Grill.  Pat also spent time cooking at New Leaf Community Markets, a group of gluten free, dairy free, health food centric grocery stores.

With his new daughter, Kaitlin, Pat moved back to Iowa in 2001 and took a line cook position at Biaggi’s.  He was promoted to sous chef, and eventually to chef partner in 2004.  Pat has been very active in, and around Davenport, including helping teach culinary arts at Scott Community College for nearly six years.

When not at work, Pat enjoys working in his yard and gardening.  He and his wife, Rhonda, enjoy cooking and dining on great food together.  Though Pat has a strong desire to get out on the golf course, he seldom does.  He is extremely dedicated to his family and our continued success here in Davenport.

Tim Moran began his career with us on October 2010 as a sous chef in Fort Wayne. From the very beginning Tim exuded integrity and his work ethic was second to none. It didn’t take Tim long to advance and on August 2012 he was promoted to Chef Partner of the Fort Wayne Biaggi’s. The real commitment came on September of last year when he asked to transfer to the Ridgeland Biaggis, a high volume unit but a unit in the midst of a lot of transition.

He uprooted his pregnant wife and 2 daughters to move 800 miles and oversee a kitchen that had great potential in but was a ways off. He had family support in Fort Wayne, a dialed in kitchen and a solid quality of life. He had no reason to leave! But Tim approached me about wanting to make a name for himself, which he did with this move.

He has had an immediate impact on Ridgeland’s quality of food, staff and financial statement with food cost and now labor.

Chelsea is ALWAYS looking to help out the team.  In this past quarter, she volunteered to take over all of the EC duties, knowing that Juanita would be out 6-8 weeks on maternity leave.  Chelsea is in charge of the service staff in Omaha, and we all know that is a huge responsibility in and of itself.  For someone, who has a baby of their own at home, to step up and insist on carrying someone else’s workload, truly amazes me.  

 

It is so rare to have a new manager have such a great sense of ownership.  It wasn’t that long ago that Chelsea was acting and operating as the MP in Omaha. She was asked to help out while we were down an MP and she jumped right in.  

 

She and I talked almost every day, and I was so impressed with her ability to quickly learn, adapt and overcome.  She never complained about the huge responsibility, and in fact, two other MP’s commented on how instrumental she was in keeping team Omaha on course.  We are so fortunate to have her as a member of our team.  Her spirit for Biaggi’s culture and commitment is unquestionable.  

 

It is her sense of TEAM, and her unselfish acts, that really define her as an extraordinary young leader.

Anyone can look at Evansville and immediately begin to count the successes that they have notched under Sonya’s leadership however, there is something that goes unnoticed by most outside of Evansville. They are a Mecca when it comes to training!

Sonya and her team have been a tremendous resource when it comes to training and have trained people not only for the Baxter region but for others as well. The commitment and countless additional hours that Sonya puts in are invaluable to our organization. As trainees get acclimated in their units they sing the praises of her and her team.

The spirit of Biaggi’s is something we all try to show every day in our buildings across the country.  We break rules to get guests what they want.  We find a way to work around conflicts so our staff can attend special events outside of work. We donate our time to help groups of all kinds. We go out of our way to help others in any small way we can.

There have been many of these situations over John Leiendecker’s eleven plus year career representing Biaggi’s in West Des Moines that would make him worthy of this award.  Most recently one thing truly stands out, he and his family made an incredibly unselfish decision that speaks to the spirit we would like to be able to see in ourselves and those we work with.   A couple of years ago the Leiendeckers became foster parents with the hope of giving some children in difficult situations a little bit of love, attention and a safe place to land for at least a little while.  They have taken some of these kids to camp, on vacations and treated them as part of their family.  About a year ago, a big eyed little girl named Jasmine showed up at their door and immediately made a huge impression on the family. 

A couple of weeks ago, to the excitement of everyone who has met Jasmine, she officially became a Leiendecker and was formally adopted by John, Lindsey and their two boys.  More than a random act of kindness, this act will give this sweet little girl an opportunity for a life she may never have had a chance to see.

We are all very excited to celebrate Jasmine’s adoption and very proud to have a family with so much character in the Biaggi’s family!

It is with great pride that I introduce Scott Kunz as our “SPIRIT AWARD WINNER” for the 1st quarter 2013. As most of you already know, Scott has been with Biaggi’s for a long time (since October 1999).

I have had the pleasure of watching Scott grow from a sous chef to one of our most tenured chef partners. Scott has given a lot back to the company, and he really thrives when given the chance to help others develop.

Just recently Scott has helped out in Algonquin and Perrysburg. This is a pretty generous gesture to go to other units, and be out of your own unit for weeks at a time. Scott has done this repeatedly without hesitation.

Scott has built and surrounded himself with a solid team in LL and that enables him to help out in other units. Scott was also awarded the chef partner of the year in 2010.

He just recently had 2 chefs training with him in Loveland for the last 2 weeks. Scott was nominated for this award because of the generous contribution of his time to help other chefs grow and prosper. He clearly has gone above and beyond to make us a better company!

Makes a Difference in Guatemala

2017sonyaguat_400I recently had the pleasure to go to Guatemala with the JDShethFoundation in cooperation with Constru Casa. Both organizations have a mission of improving lives of the under served. Constru Casa has a focus in Guatemala, my friend Jamie through her foundation has raised funds and organized volunteer trips around the world with a focus on housing and improves education.

This year, 40 volunteers, from 8 states over 10 days built 5 houses and completed a school for visual and hearing disabled children. This project was started by the Guatemalan government 9 years ago and abandoned due to lack of funding. The Jdshethfoundation.org raised the funding, primarily through an Evansville company Pollux Solutions.

Stoves for the families for the houses were donated through myself and one of my friends, and our regular Thomasina White. I don’t have words for how life changing a simple stove is for these families.

Water filters, providing clean water for 10 years, for the school and the houses were donated through the2017sonyagual2_400 AndrewPepperFund.

I’m certain I’m forgetting the generosity of some individuals. For that, I apologize.

The 40 volunteers pay an equal portion of housing building cost, arrange their own travel and all necessary expenses while on the trip. In addition to the financial investment, the volunteers invest blood, sweat and tears.. I mean that quite literally.

I can honestly say, I’ve never worked so physically hard in my life. We moved (and these are approximations) 400 gallons of water, over 9 tons of cement, which, by the way, required hauling the sand, rock and cement by hand in order to use the mixer. The cement mixer was on site for only 1 day…all other cement, and there was plenty of that, was hand mixed using shovels.

The team of 9 in the school had 5 days to complete the project. We applied stucco to the ceilings and walls, we scraped the randomly sized boards used for scaffolding so they could be reused on another project and we cleaned the work site to have it free of construction debris. All of this, while the kids were in school.

Guatemalan people are impressively happy and equally grateful. Many live hand to mouth, but they do so together.

I’m so thankful to have been a small part in making a difference. The entire team was amazingly hard working and our hearts leave Guatemala full.

0517champ1_400Employees of Biaggi’s in Champaign volunteered to help the University of Illinois’ annual Campus and Community Day of Service. This is the 5th year for this event, in which thousands of volunteers packaged meal pouches for needy families served by the Eastern Illinois Food Bank. The goal this year was 150,000 meal pouches to match the University’s sesquicentennial (150 years). Led by Chef Partner Joe Zaranski, the team of 6 servers and 2 cooks packaged over 300 pouches in 1 1/2 hours of service.

“We all left with an overwhelming feeling of pride because we were a part of something that will help thousands of needy families in our community. Plus, on top of our volunteer efforts, Biaggi’s helped sponsor the event!”, reported Chef Zaranski.

Earlier this month Biaggi’s of Omaha hosted a Robert Mondavi Wine Dinner to celebrate their 50th anniversary of winemaking and to reintroduce the newly remodeled restaurant.

I created a 6 course event exhibiting the luscious colors and flavors of a long awaited spring. The sojourn kicked off with a steelhead trout amuse bouche with faux caviar roe and was followed by a robust bourbon glazed pork belly with spring pea puree and smoked white cheddar polenta. An intermezzo of a strawberry poached rhubarb with vanilla bean panna cotta was provided before the show stopper of the evening; a beautiful crimson borscht risotto with Noir braised short rib with goat cheese & dill crema. Next was the Mediterranean spiced lamb chop with pickled carrot puree and castelvetrano olive and golden raisin couscous. The journey ended on a sweet note of coffee & pistachio semifreddo, with lemon curd and white chocolate.

The feedback for the cuisine, wine, and new look of the store were all high praise. We were all content with a job well done.

Biaggi’s of Omaha participates in Visiting Nurse Association’s Soup & Art Exhibit

This is the 3rd year Biaggi’s in Omaha has competed in the Visiting Nurse Association’s Soup & Art Exhibit. Over 1000 guests attend the event and close to 20 local restaurants/catering companies all compete for People’s Choice Best Soup, People’s Choice Best Table Setup, and Best Judged Soup.

This year Chef Aaron King was awarded the People’s Choice Best Soup for his “Smoked Guyere Bisque”. The soup was a representation of a deconstructed Pastrami and Rye – Guyere Bisque base with garnishes of in-house smoked duck pastrami, red cabbage sauerkraut, rye crouton, and a dijon vinaigrette.

All money raised by this event pays to support nurses and items needed to aide local shelters.

Congratulations for a 3rd win in just as many years attending the event!

World Series Trophy comes to Biaggi’s

The Vice President of communications for the Chicago Cubs brought a group in Monday night for dinner and also brought with them the World Series Trophy!

Biaggi’s of Evansville, IN runs event to support two local Military charities

We recently ran an event to support Soldier Dogs and the 380th Family Readiness Group.

 

Soldier Dogs is a non-profit charity based in Evansville that is run by 3 Gulf war veterans. They save dogs from kill shelters, provide all the appropriate vaccinations, then train them as full time service Dogs. The dogs can sense low blood sugar, wake their owner if they are having nightmares and even call an ambulance. Soldier Dogs not only pairs pet with veteran\soldier, they also have weekly meetings to talk about PTSD and suicide prevention. They also pay any veterinary expenses that the dog may incur. They have pared over 60 dogs in the past three years.

We raised $700 for this cause during our event.

The 380th FRG is also based in Evansville. They provide money to veterans with PTSD to help pay their medical bills and living expenses. They also help vets pay for groceries and Christmas presents.

The $600 that we raised will help them hold a Christmas party for the vets. Something that they were not able to do last year.

After a guest loved our 14 Pronto Pack Cater the previous weekend, he excitedly asked if we would cater an event for 225 hungry people this weekend. No Problemo for our Kitchen!! 4 Hours of prep work, 71.25 lbs of turkey, 12.5 lbs of Swiss cheese , 800 tomato slices, and 1 case of avocados later we had 200 Turkey Avocado Sandwiches!! Along with 2 boxes of chips and a some Pronto Packs, we had a happily sated group of guests.

The guests at Biaggi’s Champaign enjoyed a fantastic menu paired with the wines from Terra D’oro Winery. The menu featured a Seafood Terrine, Grilled Radicchio Salad, House-made Wild Boar Sausage flavored with Tart Cherries and Morels tossed with Garganelli pasta, King Salmon with Wild Mushroom Broth, Bison Striploin and House-made Mascarpone Gelato with Grilled Mango. The guests all agreed that this was the best wine dinner to date! Chef Joe Zaranski pushed things over the top offering up an Amuse Bouche of Smoked Fennel Cured Salmon that he cured and smoked in house. He also brought science to the meal with an Intermezzo of Fresh Strawberry with Rose Balsamic Pearls that had our guests amazed at how the pearls burst with flavor. While guests went back and forth on which course was their favorite, they took time to order an amazing amount of wine both nights.

At the closing, Regional Manager for Trinchero Wines, Steve Patton, mentioned that for all of the wine pairings that he has done over the years, he was never as impressed with the food pairings as he was here at Biaggi’s.

It was truly a great time for all!

Biaggi’s Omaha hosted it’s second beer dinner of 2016 with Zac Triemert, President and Master Brewer & Distiller of Brickway Brewing Company. Chef Aaron King supported by sous Chef Christopher Sandquist and assisted by managers Chelsea Powell and Ashley Clark executed a very exciting and generously applauded 6 course tasting menu beautifully paired with selections from the local brewer.

 

With 53 guests in attendance, Omaha notably served it’s largest crowd for a beer dinner to date. Congratulations to the team!

Biaggi’s has partnered up with Lifetime Fitness here in Algonquin and are planning numerous events.
LifeTime has over 12 000 members, with over 3000 visiting them every day. LifeTime Fitness is by far the nicest health club in the area and their members are willing to pay for quality. I think the same applies for our guests which makes this partnership such a good match.
Don’t be fooled into thinking that members of a health club always eat only salad! On the contrary, they often feel that they have earned the right to eat whatever their hearts desire, but gravitate towards fresh and well prepared. That is why they wanted Biaggi’s to cater this event and many more to come.

The event was a huge success and we handed out promotional material to well over 300 people. We also managed to get 150 people to signed up for Club Biaggi’s!

Recently Biaggi’s of Omaha hosted one of it’s most successful wine dinners with winemaker Nicholas Goldschmidt.

 

We had 53 attendees and Chef Aaron King beautifully executed a very inventive and challenging menu. Chelsea Powell punctuated the dinner with hand-made chocolate tulips and a rose ricotta mousse. Ashley Clark worked with our rep and the wine maker to offer some great pricing and the restaurant sold an additional $4,000 in retail wine for the event.

 

It was an exciting event for all involved.

Here is a picture from the 2016 VNA Soup & Art fundraiser that Chef Aaron and myself participated in for the second year. Chef Aaron was rewarded with the Best Judged Soup for the second year in a row! (only done once before in the 19 years of hosting the event) He served a Smoked Calabrian Bisque garnished with a Goat Cheese creme fraiche, crispy Prosciutto d’Parma, and a smoked seasoning blend.

 

And I took home the Best Decorated Table for the second year in a row as well with a “cabin in the woods” theme to compliment the smoked soup chef was preparing.

Just thought I would share the fun news! The plaque and traveling soup pot will be returned to Biaggi’s after they are engraved.

Below are some pictures of events that have taken place here in Omaha this past October.

 

 

First was the Ted E. Bear Hollow offsite event on Sunday, October 11th where Chef Aaron competed with 3 other local Italian restaurants/Chefs. It was a dinner, fundraiser, and silent auction to help raise money for a foundation that supports families after times of loss (i.e. after a parent dies of cancer they have all ages counseling and family activities for those in mourning). Chef Aaron presented a hand-rolled fusilli pasta in Butternut Squash and Autumn spiced sauce garnished with Applewood smoked bacon, spiced candied walnuts, and toasted sage.

Next, on the evening of Sunday October 18th, we hosted the International Food and Wine Society, Omaha Chapter 12. Chef Aaron prepared 5 courses to feature “Coast to Coast” culinary selections traveling East to West across the continental U.S.

Jeremy Beck helped get us involved on Thursday, October 15th with another offsite fundraiser and silent auction to help BoysTown Lied Children’s Research Hospital. We were one of several local restaurants presenting and served a Pumpkin Risotto and a Smoked Pork Tenderloin.

Last, but definitely not least, we hosted our October Nebraska Brewing Company Beer dinner on Sunday, October 25th. It was a great success! 40 attendees to enjoy 6 courses, 5 paired with different beers from a local microbrewery here in Omaha. Chef Aaron King and Ashley Clark put together a well executed evening in which all whom attended enjoyed immensely.

Sonya Shares her trip to Argentina

 

sonya2_400. I wanted to share a bit about my recent trip to
Mendoza, Argentina.

What an amazing week hosted by the Zuccardi Family Wineries in Mendoza. This family is of Italian descent, but very proud to be Argentine. The hospitality was world class.

 

 

Alberto Jose Zuccardi pioneered cultivating vines in Mendoza, which, by the way, is a dessert. Every vine is hand planted, carefully watered and hand harvested. The 3rd generation of the Zuccardi Family is now taking the lead with innovation and wine making. The goal for this family is to create “unique” wines that express the region in a natural manner. The science behind the micro-terroirs was fascinating. The vineyard managers determine the varietals to plant based on the soil depth. The harvest time and duration changes each season, as is always true. The intricate system of watering vines has been catered to the land, soil depth and amount of natural moisture the vines can be expected to receive from underground, natural sources.

But more impressive than the science was the passion each person we met possessed. The winemakers, the restaurant director, the grappa manager, the olive grove manager and the compost manager (yes, they make their own compost) were all very eager to share their parts in the success of the Vineyard with us. The passion, hospitality, attention to detail and genuine desire to create an experience for our group was very reminiscent of what we do in our restaurants each and every day. We are passionate about Biaggi’s, about service, about hospitality and about the attention to detail. When we execute on this level, there is no doubt our guests walk away with a world class experience.


I highly recommend you get your hands on Santa Julia Malbec Organica, Zuccardi Q (every varietal was unique), Zuccardi Zeta or Zuccardi Tito.

Last month, I ran my first 5k with some awesome Biaggis friends! Lee Farber completed it walking in 52 minutes, I finished with Kristen Ryan a server in 43, David Zoberman, a server and bartender who has already lost 50 pounds finished in 40, Cory Purcell a manager finished his first 5k in 27 minutes. And my son Jonah ran the last half mile with me!

It was a race to end homelessness for a safehaven. A great cause and an awesome time!

Last month, the Bloomington Team (Chef Luis Blanco, Liz Coon & Chuck Smith) had a wonderful time at the Wine, Cheese & Chocolate Festival event to benefit Bloomington-Normal Catholic Schools held at the Parke Regency Hotel & Conference Center.

Chef Luis from our Deerfield, IL location is also a chocolatier and created the beautiful chocolate wine bottle along with delicious truffles for the guests.

Thanks for making the trip down to Bloomington, Chef Luis!

The festival was a great success and we gained good exposure in the community.

With 189 guests, a 4 course meal and a choice of 3 entrees (101 Filets ordered!), things could have gone south in a hurry. However amazing teamwork and hard work resulted in enthusiastic guest feedback from every single table.

Last month, Chef Aaron King and Chelsea Powell represented Biaggi’s of Omaha in the annual Visiting Nurses Association’s soup and art gala fundraiser. Attendees voted on their favorite soup, table presentation and artist. A panel of judges also votes on the best soup of the day from the 25 participating restaurants.

We are proud to announce that Biaggi’s won BOTH categories for best soup(butternut squash with apple, spicy walnuts and bacon) and best table presentation.

Recently, the Fort Wayne team had a great time at the Fort Wayne Bridal Extravaganza! The key speaker was the star and host of T.L.C’s “Say Yes to the Dress” and ” Randy to the Rescue”,
Randy Fenoli.
Mr. Fenoli stopped by our table and I was able to have a short conversation with him and hand him one of our take out menus. Mr. Fenoli was very impressed and said he looked forward to enjoying our food for his Oscar night dinner! Later in the evening Randy Fenoli responded to a “Tweet” of mine and sent a tweet out over his own personal twitter page which has over 44,000 followers! This tweet could be seen by all of Randy’s followers and has our name all over it! A wonderful success for Biaggi’s and the

Emmalyn Mae was born on Friday October 17th at 5:11 am. She weighed 7 lbs 8oz and a length of 19 inches.

Both Emmalyn and Alyssa are doing great after the birth, and Alistair and Talia are excited for their new sister! The proud papa says that Emmalyn was born inside her amniotic sac, which is rare and really cool!

Troy Wins Chef Competition (From WJBC.com)
Chefs for PATH began in 2009 as a friendly competition between some of the top local chefs in the Bloomington/Normal area and fundraiser for
PATH Crisis 211.

Each chef is provided specific ingredients from Sysco Foods as well as a list of acceptable items that they may use from their restaurants. Additionally, they are given a $100 gift card to Fresh Market where they can choose anything they would like, the only stipulation is that they must use the ingredient in every serving.

Guests of the event enjoy tasting the preparations of each chef as they rotate through the stations during the gala. After they have completed the rotations and voted for their favorite dish, the votes are tallied and two finalists are announced. The top 2 vote getters move to the “live cooking stage” with just their knives and one assistant chef. A mystery basket is unveiled, the chefs have a few minutes to prepare their menu’s and then it’s time for the live cook-off.

This years participating chefs represented Biaggis, Baxters, Destihl, Westminster Village, and The Park Regency. After a live finale cook off between Baxters and Biaggis, Troy Tomlinson-Chef Partner at Biaggi’s Ristorante Italiano was declared the winner.

Last Saturday, December 14th Biaggi’s in Deer Park hosted our 3rd annual Breakfast with Santa benefitting the WINGS program. WINGS (Women In Need Growing Stronger) helps homeless and abused women and children by offering integrated services that meet their needs for shelter, education, guidance and support. The event was held from 8:00 – 10:00 am (I know, I was also shocked that servers could wake up that early too!). $2472 was raised at the door, while our servers donated over $300 in additional gratuities to the organization as well.
It was a long day for everyone during a busy holiday season, but our staff always ceases to amaze me with their generosity and tenacity!

Their First Wine Dinner

 

 

We hosted our first wine dinner a few weeks ago and a good time was had by all who attended. Our RNDC rep, Lisa Butler helped Jeremy Beck in presenting Bonterra wines and highlighted the organic and sustainable practices used by Bonterra.

Our hostess, Kortney McLouth, led the painting portion which turned out to be fun to watch as much as it was fun for those participating. We had 20 attendees, several of which had never experienced Biaggi’s before and will definitely be back!

We are looking to get another dinner going before the end of the year, and already getting ideas for a “Beat the Crowds/ Pre-Valentine’s Date Night” dinner the week before Valentine’s day.

This month Biaggi’s – Davenport participated in a Martini Shake Off, competing against 25 other restaurants and took home 2 out of 6 awards!

Bartenders Choice Martini for habanero infused lychee pineapple martini and,
Best Martini Presentation for our ginger mint mango and salted peanut butter.

This was a fantastic event benefiting the HAV Life foundation, which provides money for kids to pursue musical and athletic goals.
Despite the snow, the event was sold out with 1500 people attending. I am so proud of all who represented Biaggi’s so well in our James Bond themed night!

We also host a ‘giving tree’ in our lobby. Our guests and employees choose tags for the women and children to help provide a joyful holiday

 

This year, our Breakfast with Santa raised over $2500 in donations for the breakfast and our server’s generosity in donating their gratuities.

We couldn’t be more proud of a staff that donates their time, talents and treasure toward such a wonderful cause during such a busy holiday season.

Peoria Biaggi’s Supports Easter Seals

These pictures are from Easter Seals’ Wines and Polo on the Prarie fundraiser to benefit disabilty service for kids. The event had just under 1300 guests and helped raise more than $140,000.00.

Introducing Madisyn Rose Lane. After a brief scare of a low heartbeat and a emergency c-section, mom (Ashley) and Maddie are doing great. 5 lbs and 2 oz, 17 1/2 inches, born at 1:00pm on Monday June 11th. Pictured, Tyler (8), Emma (7), and Maddie (1 hr.). Thank you all for the support.

A great job was done by our Biaggi’s team in Ridgeland! Our team, consisting of Chef Patrick Harley and Event Coordinator Meredith Cooke, helped raise money for Jackson Police Department’s “Take a Tasty Bite Out of Crime” Fundraiser.

Fort Wayne Hosts Local Girls Scout Troop
Sous Chef Tim Moran entertains a local Girl Scout troop as they
completed pizzas and merit badges

fwtim_400 A local girl scout troop stopped in to work on their cooking merit badge and some needed, pun intended, “hands on” experience in a real world kitchen. During their visit, Tim discussed food safety, ServSafe food practices, as well as how things in a high volume restaurant should run. The girls were delighted to roll up their sleeves and put their own spin on the pizza program and even came up with some interesting options, the most common was adding chocolate crumbles as the final topping.

Overall they had a terrific time and the scout leaders were thrilled With Tim’s attention.
